With an innovative and passionate approach, chef Gil Fernandes reinterprets traditional Portuguese recipes, adapted to modern cuisine, and creates a unique gastronomic experience, which is a true celebration of Guincho’s memories and roots.
Comprising twelve carefully designed tasting moments, this new menu provides a sensory journey through the diverse traditions of Portugal. Dishes such as honeycomb stand out, a creation that captures the essence of the fauna and flora of Guincho, where this hotel unit is located, combining the tasty sea broth, bomboca fricassee, the touch of honey and seaweed that take us back to the coastal environment. In turn, Grandmother São’s chicken coop transports us to the chef’s childhood memories, when he would collect eggs with his grandmother.
From the river emerge the irresistible domingueiras, which celebrate family life on Sundays, with the tasty, hooked sea bass, accompanied by cabbage and a delicate Portuguese stew broth. To conclude this itinerary, the pine dessert recreates the unique Guincho landscape, sublimely combining passion fruit, yoghurt, pinecone, pine needle, crème brûlée and smoked pine nut, in a true delight for the senses.
